3 Recipe's from a Organic Paupers Kitchen

I love simple food. I also require the highest quality of food, which I believe  to be organic, local whever possible, and still alive (fresh). Eating is a journey into the senses where tiny details can make all the difference, the biggest difference to me about eating organic is the superior flavour. Trust me, it's sweet, but  I'm bitter that lot's of organic food is expensive, so I am on a quest for cheap but wonderful recipes.

Here are some of the fruits of this quest. Please share your favorite recipes with me, I'm always looking to try something new.-Kitty

Black Bean and Corn Chili ...serves 4

Base 

1-can of Black Beans -approx$1.20

1-can Corn -approx$1.00

1-bunch Organic Cilantro (about 1-1.5cup chopped) -approx$1.20

Juice from one organic Lime, or 2tbs Lemon Juice -approx$0.80

1tsp Cumin -priceless or at least less than a dime

Salt to taste 

Nice Extras to Add

Chopped Green Onion

Chopped Red, Yellow or Green Bell Pepper

Grated Chedder Cheese (no more than 2Tbs)

Chopped Avocado 

Cayenne Pepper

Chipotle pepper 

or whatever else you can think of 

-Combine all ingredients cold, in a saucepan and then heat until it reaches your desired temperature. Serve as a Chili, and use leftovers in a burrito in your lunch the next day

Nutritious and Delicious Broccoli Garlic Stir Fry... serves 4

Two Large Organic Broccoli heads with Stems -appox $1.50

0.5cup Soy sauce -less than a dime

0.5cup Lemon juice -less than a dime

1tbs minced garlic cloves -less than a dime

1tbs sesame oil -less than a dime

- Peel the bottom most part of the broccoli stem then slice thinly, where the broccoli stem starts to divide into the florettes is still tender and does not require peeling, slice this as well. Divide the florettes into bite sized peices. Add all ingredients to an already hot pan over medium heat and heat until broccoli turns bright green, and remove from heat before broccoli loses its crunchy goodness (2-3minutes). Serve with brown rice or rice noodles.

Low Fat, Heat Beating Tzatiziki ...serves 4

2-cups low fat, organic plain yogurt -approx $3 for a container

1-Cucumber, peeled and grated -approx $1

2tbs Lemon juice -less than a dime

-Combine all ingredients, and serve chilled, with toasted whole wheat pita slices. With olives and tomatoes on the side.Also makes an excellent face mask for sun burned skin.
 

Organic Italian Tomato-Oregano Salad

1-Ripe Tomato per person -prices vary with the season, but usually around 50cents

1tsp Fresh Chopped Oregano per tomato -free from my garden

 1tsp Balsamic Vinegar, of the highest quality you can afford, per tomato -less than 20cents

Salt to taste, or none at all

-Cut the tomatoes into 1/8's with a serrated knife , toss in a bowl wiith the other ingredients and serve.

Organic Low Fat Baked Potato Topping

1 organic green onion per person -approx 15cents

1tbs simulated or real bacon bits -less than 50cents

2tbs Organic Low Fat Plain Yogurt -approx 25cents

Louisianan Hot Sauce, or other hot sauce, to taste -less than a dime

-mix all ingredients together and use as a dip or topping for your baked or roasted organic potatoes.
